Green Chile Stew

Green Chile Stew from Therese Culbertson

Brown 1-2 lbs cubed round steak (or chicken) in oil. Add 1/2 cup chopped onion and 1 clove minced garlic and cook lightly. Mix 1/4 c. flour with 1/4 c. water. Add flour plus 2 cans (14 oz each) Swanson's chicken broth. Cook at simmer, covered, until meat is tender. Add 1 can (14-16 oz) chopped tomatoes, drained, 1 1/4 c. chopped green chili, 2 medium potatoes, cubed. Season with 1 tsp salt and some pepper. Cook, covered, until potatoes are tender.

Swiss Steak

Swiss Steak by Beehive Home (1995)

2 lbs. Round steak
4 TBS flour
¼ tsp. salt and pepper
2 TBS oil
Onions
2 cans whole tomatoes (juice and all)
2 green peppers cut into slices

Combine the flour, ¼ tsp. salt and ¼ tsp. Pepper. With a meat mallet, pound flour mixture into meat. In a large skillet brown meat on both sides in hot oil. Drain fat. Put meat in crock-pot and add vegetables to it. Cover; cook on low-heat setting for 10-12 hours or high setting 6-8 hrs.

Ask the butcher to cut a sirloin tip roast into thin slices. Marinate meat for several hours in the following mixture:

1 clove garlic, chopped
2 TBS sugar
4 TBS soy sauce
¼ tsp. fresh grated gingerroot

Fry quickly in a generous amount of hot vegetable oil. Good served with Cucumber Relish.






Cucumber Relish

8 small cucumbers, cut lengthwise in wedges, seeds discarded
1 carrot, sliced thin with vegetable peeler

Soak in salted water for 10 minutes. Drain. Cover with:

¼ cup vinegar
¾ cup water
sugar to taste

Outback Steakhouse-Style Steak Recipe
This is a recipe I got off Recipe Goldmine. Delicious and easy rub for steaks!

4 top sirloin steaks or rib eye steaks or filet steaks

Seasoning:
8 teaspoons salt

4 teaspoons paprika

2 teaspoons ground black pepper

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon cayenne pepper

1/2 teaspoon coriander

1/2 teaspoon turmeric

4 servings


1. Mix together seasoning ingredients and rub into each side of steak.
2. Grill steaks on a large frying pan over medium-high heat; press down on steak with spatula or tongs to sear the edges.
