Grilled Chicken with Cilantro Sauce Rachel Betteridge 2006
Combine:
¾ tsp ground cumin /////////// 4 thin chicken cutlets
¾ tsp salt //////////////// ½ cup cilantro, chopped
½ tsp ground chipotle chili pepper //////// 2 TBS olive oil
½ tsp garlic powder ///////// 1 ½ tsp red-wine vinegar
½ tsp sugar ////////// 1 garlic clove, crushed
Preheat grill. Rub left side ingredients over all sides of chicken. Spray both sides with olive oil. Grill until heated through, turning once (about 2 minutes per side). Transfer to a serving platter.
Meanwhile combine right side ingredients with some salt and serve with the chicken.
