Sweet & Sour Chicken
2 chicken breast, cut into strips
2 TBS oil
¼ cup water
2 TBS cornstarch
¼ cup brown sugar
½ tsp. Salt
1 cup pineapple juice
1 TBS soy sauce
1/4 c. vinegar
1 1/2 c. green and red peppers
1/4 cup thinly sliced onions
1 large can pineapple chunks
Brown chicken in oil. Add water, cover and simmer for 45 minutes. Combine cornstarch, sugar and salt. Add vinegar, pineapple juice and soy sauce. Cook until slightly thick, stirring constantly. Pour sauce over hot chicken, let stand at least 10 minutes. Add peppers, onions, pineapple chunks, and cook 5 more minutes.
