Spinach and Strawberry Salad by Rachel Betteridge 2006
Combine:
6 cups spinach
1 ½ cups sliced strawberries
1 TBS sunflower seeds
1 sm red onion, thinly sliced
1 head radiccio, washed, leaves separated
1/3 cup enoki mushrooms (2 oz)
Dressing:
1 TBS seasoned rice wine vinegar
2 TBS honey
2 tsp Dijon mustard
sea salt and pepper
To serve, pour dressing over salad and toss. Place one radiccio leaf on each plate. Place one cup of salad in each leaf and garnish with mushrooms.
