Hawaiian Haystacks
½ cup butter
½ cup flour
½ tsp. Salt
3 cups milk
1 (10 ¾ oz) can Cr. of Mushroom Soup or Cr. of Chicken
1 cup sliced mushrooms
6 chicken breasts, cooked and cut into pieces
Melt butter in a large saucepan. Add flour and salt and stir. Add milk and cook until thickened, stirring constantly. Add Cr. of Mushroom soup, mushrooms and chicken. Simmer on low heat for 15 minutes. (serves 8)
Serve over sticky, white rice with the following toppings:
Grated Cheddar cheese
Chopped celery
Chowmein noodles
Pineapple tidbits
Chopped tomatoes
Coconut
Toasted sliced almonds (single layer in pan in 350 oven for 10-15 minutes)
Chopped green onions
Soy sauce
Cherry on top (optional)
• When I am crunched for time, I have used one of those rotisserie chickens you buy (already baked at the store) and just tear the meat off and throw it in – so delicious and saved lots of extra kitchen time.
• Also, I like that you can prepare all the toppings in advance or when you are having a group over, it is easy to split them up and ask guest to bring a couple toppings.
• The combo of all the ingredients is so yummy!! Enjoy!
