Crunchy Avocado and Black Bean Salad Rachel Betteridge 2006
Combine:
1 small shallot, minced //////// 1-15oz can black beans
3 TBS lime juice //////////// 1 red bell pepper, diced
2 tsp honey ///////// ½ English cucumber, diced
1 tsp lime zest ///////// 1 avocado, diced
1 tsp olive oil
½ tsp salt
¼ tsp ground pepper
Whisk together left side ingredients. Combine beans, pepper and cucumber. Add dressing and mix well. Add avocado; gently toss to blend. Serve.
