University Place Apple Cake Becky Gehring
In Blender:
2 Cups water - wash, quarter, & core 2 med. apples (keep peel on),blend & pour thru strainer into cup. Reserve apple water for sauce.
Gradually add 1 C. sugar to 1/4 C. soft butter. Add apple pulp.
Sift & add:
1 C. flour
1 tsp. each of soda & cinnamon
3/4 tsp. nutmeg
1/4 tsp salt
Beat until smooth (1/2 cup nuts optional). Bake in 8x8x2 at 350 for 45 min. Serves 8-9. Serve warm with Apple/Butterscotch Sauce.
Apple/Butterscotch Sauce:
Blend in saucepan: 2 T. flour, 1 C. brown sugar. Add 2 T. butter and 1/2 C. apple water. Heat to boil. Stir constantly and boil 1 minute.
Drizzle over whipping cream or ice cream on top of cake.
