Texas Two-Step Slaw

Texas Two-Step Slaw by Merlene Betteridge

3 cups coleslaw mix
1/4 cup Mexicorn, drained
1 jalapeno pepper, seeded and chopped
2 Tblsp. chopped red onion
1 Tblsp. minced fresh cilantro
1/2 cup shredded cheddar cheese
3/4 cup ranch salad dressing
2 tsp. lime juice
3/4 tsp. ground cumin

In a large bowl, combine the first six ingredients. In a small bowl, combine the salad dressing, lime juice and cumin. Pour over the coleslaw and toss to coat. Refrigerate until serving.

Yield:8 servings.
