Lemon Bars Leslie Soelberg (Cera’s friend)
1 yellow cake mix////////// 1 egg
1 8 oz cream cheese//////////// 1/3 c. sugar
1/3 c. oil /////////////// 1 tsp lemon juice
Mix cake mix, 1 egg and mold until crumbly, reserve 1 cup. Put into 9x13” ungreased pan. Bake at 350 for 10-15 minutes until golden. Cool 10 minutes. Mix cream cheese, sugar and lemon juice. Spread on top of baked crust. Evenly sprinkle w/ remaining crumbly mixture. Return to oven for an additional 10 min or enough time to lightly brown the topping. Cook, cut and serve. Store refrigerated.
