Carrot Cake

Carrot Cake

2 cups flour
2 cups sugar
3 cups grated carrots
½ cup oil
4 eggs

1 ½ tsp. cinnamon
2 tsp. Baking powder
2 tsp. Baking soda
½ tsp. salt

Mix sugar, oil and eggs. Slowly add dry ingredients. Add carrots last. Bake in 9x13 pan at 325 for 45 minutes. Top with cream cheese frosting.

Cream Cheese Frosting
1 cup powdered sugar
8 oz. Cream cheese

¼ cup margarine
2 tsp. Vanilla

Cream margarine and cream cheese. Add other ingredients. (This frosting is not very thick.)
