Banana Bread Rachel Betteridge
1 ½ cups all-purpose flour /// 2 slightly beaten egg whites
1 ¼ tsp. Baking powder /// 1 cup mashed banana
½ tsp. Baking soda /// ¾ cup sugar
½ tsp. Ground Cinnamon /// ¼ cup cooking oil
1/8 tsp. Salt
In a bowl, stir together flour, baking powder, baking soda, cinnamon, and salt. In another bowl, stir together egg whites, banana, sugar, and oil. Stir flour mixture into banana mixture just till moistened. Bake in a 350 oven for 45-50 minutes. Cool in pan for 10 minutes and then cool thoroughly on a wire rack.
Wow, this is the moistest, healthiest version I've tried. YUM!
